“Sabathini” is produced to be a very fresh and fruity wine. The cuvée is made up of Welschriesling and Sauvignon Blanc, typical grapes found in this part of Southern Styria. The grapes are sourced from vines across numerous small vineyards, planted on soils of fine marine sediments, sand, conglomerate and gravel. The climate here is warm and humid Mediterranean, giving a long growing season defined by cool nights which deliver unique freshness and aroma to the wines.
The grapes are exclusively harvested by hand. Once at the winery, the juice is subject to spontaneous fermentation with natural yeasts. The wine is then rested in stainless steel tanks before release.

CRITIC RATINGS
91 FalstaffOn the nose, this wine has rich, ripe aromas of peaches and apricots with a bright saline minerality to add to the freshness. On the palate the fruit and mineral finesse flows throughout and is perfectly balanced by racy acidity resulting in an incredibly easy drinking wine.
This wine pairs well with light appetizers such as bruschetta, caprese salad, and summer salads, as well as different kinds of pasta dishes, vegetarian dishes, and risotto. For main meals we’d recommend roasted/fried fish, roast pork, all kinds of fried dishes.
