The single-vineyard, Hochberg, faces South and South-West, ensuring optimum warmth throughout the year. The soil is rich, sandy loam over a subsoil of sandy limestone.
The certified organic grapes were handpicked at the end of September. The grape berries were fermented in open 500-litre wooden vats. The pomace cap was punched down by hand. The wine remained on the pulp for 40 days. After pressing, the wine matured for 30 months in 500-L wooden barrels.
The vines are 22 years old and are planted on medium to heavy calcareous loam over limestone with calcerous subsoil.

98 FalstaffThe wine is deep dark ruby with purple highlights. The nose reveals attractive blackberry and ripe sweet cherry, with subtle notes of oak spice and tobacco. On the palate the wine is juicy, with ripe cherry, herbal spice and fine-grained tannin, leading to a long finish with lifting saline minerality.
Pairs well with dark meat, game, braised meat.
